• 1 lb. Pasta shells
  • 2 lbs. Tomatoes
  • 2 Cups Fresh Mozzarella, diced
  • 1 Small red onion halved & thinly sliced
  • ¼ Cup Extra-virgin olive oil
  • ¼ Cup Flat leaf parsley
  • 1 Garlic clove, minced
  • Salt & pepper

In a large pot of boiling salted water, cook pasta until al dente, according to package instructions; drain. In large bowl, toss warm pasta with tomatoes, mozzarella, onion, olive oil, parsley and garlic; season with salt and pepper. Serve and enjoy!
