I like to gather up a variety of heirloom tomatoes and slice them in about 3/8” slices. Using a good soft mozzarella cheese, do the same. For every slice of tomato have a slice of cheese and a basil leaf. Arrange on a platter alternating between a slice of tomato, a basil leaf and a slice of cheese. Get creative. This dish looks especially nice in a pinwheel design. Sprinkle with salt, cracked pepper and drizzle with olive oil. This is so simple yet so good. I like to use a good quality sea salt and olive oil when making this dish.
