• Lemon cucumbers, peeled and wedged
  • Tomatoes, wedged
  • Red onion, thinly sliced wedged
  • Basil, roll leaves together and thinly slice
  • A good Italian dressing

This is one of my favorite combinations of flavors. It’s simple and can be added to for a change of pace. I’ll share one of my secrets with you. When I talk about a “good” Italian salad dressing, I use Good Seasonings Italian dressing with a good olive oil and vinegar. For this salad I use white wine vinegar for a light summer taste.  I use balsamic vinegar for a richer flavor.

It doesn’t get any simpler than this. I like to serve this salad in a shallow dish since it displays itself so well. Toss cucumbers, tomatoes, onion and basil with Italian dressing and serve. You can add Calamatra olives and Feta cheese for a richer salad.

Some of you may not be familiar with lemon cucumbers. They happen to be my favorite cucumber and you can find them at the farmers market when in season. They are round and yellow with a mild flavor and taste nothing like a lemon.
